We bring this amazing experimental lot from Adolfo and his team at Passeio who are in constant search of the perfect varietal. Part of the farm is devoted to a research area where they constantly grow and develop new varietals seeking the prefect bean, and this Pau Brasil varietal is a great example of the excellence their work produces. In the cup, expect multiple dimensions of sweetness, beginning with a ripe pear and coconut sugar soaked raisins, with a clean caramel finish with a refreshing ripe citrus acidity. Great as a morning or mid-afternoon espresso or a refreshing filter brew.

Passeio is one of our favourite farms that we buy every year as soon as the season arrives. We cannot wait to visit Adolfo at Passeio again, very soon!

This particular coffee is quite unique and is the first of its kind at Fazenda Passeio. The Pau - Brasil MG1 cultivar is derived from artificial hybridization between Red Catuaí and Timor Hybrid, created by a team of researchers from EPAMIG (Farming Research Company of Minas Gerais) and UFV (Viçosa Federal University). This varietal was experimentally constructed to combat the threat of coffee leaf rust. In addition to its disease resistance, Pau Brasil is also high yielding, but able to maintain high quality. This varietal is not common amongst farms in Brazil , but its short stature makes it easy to in corporate into farms.

Passeio’s coffee is harvested only when the cherries reach an advanced stage of ripeness, to avoid processing green beans. All the cherries are handpicked, with natural lots immediately taken to the drying area. For this lot, drying begins at the estates concrete patios. Next, the coffee cherry is moved to the raised beds, guaranteeing a long, uniform drying period. The coffee is then kept in parchment in wooden resting bins for a minimum of 60 days, before the final dry milling and sorted immediately prior to export.
