It is with great joy that we bring this amazing experimental lot from Adolfo and his team at Passeio who are in constant search of the perfect varietal. Part of the farm is devoted to a research area where they constantly grow and develop new varietals seeking the prefect bean, and this Arara bean is a great example of the excellence their work produces. We cannot wait to visit Adolfo and fazenda Passeio again, very soon!
Arara originated as a cultivar between Obatã and Yellow Catuaí. Arara has been studied by institutions since 1988, however, only since 2000 has it shown superiority in production. The variety often produces larger screen size beans, high scoring cup quality and resistance against diseases such as leaf rust. The fruits are yellow and their ripening cycle tends to be late.
Passeio’s coffee is harvested only when the cherries reach an advanced stage of ripeness, to avoid processing green beans. All the cherries are handpicked, with natural lots immediately taken to the drying area. For this Arara lot, drying begins at the estates concrete patios. Next, the coffee cherry is moved to the raised beds; guaranteeing a long, uniform drying period. The coffee is then kept in parchment in wooden resting bins for a minimum of 60 days, before the final dry milling and sorted immediately prior to export.
All our coffees are freshly roasted and packed in fully recyclable bags at our roastery in Penryn, Cornwall. In order to preserve the quality and freshness, we roast and pack your coffee on the day of dispatch.
We roast, hand-pack and ship all orders on Monday and Thursday, including Smält Hot Chocolates, merchandise and hardware items.
